 Recipe of the Month

EGGPLANT-CHEESE CASSEROLE

12" dutch oven

2 MED  EGGPLANT
1 10 OZ CAN CREAM OF
    MUSHROOM SOUP
4 CUPS BOILING
   SALTED WATER
4 OZ MOZZARELLA
   CHEESE
1 EGG
1 CUP CRACKER CRUMBS
1 CUP COTTAGE CHEESE
1 T. ITALIAN SEASONING

Wash and peel eggplants, cut into cubes. Place eggplant in a pan of boiling water, cover cook about 5 min.s until tender. Drain water and place eggplant in an oiled  12" Dutch Oven. Beat egg and stir egg, cottage cheese, seasoning, and soup with eggplant. Slice soft cheese and place on top, sprinkle on cracker crumbs and bake for about 30 minutes.

VARIATION

Use 8 oz can of tomato sauce instead of mushroom soup

The Las Vegas Dutch Oven Society Website!

We are a family oriented club whose members can participate in a variety of activities including Dutch Oven Gatherings, campouts, and community service.

Each month we have a gathering where we cook together, then share a great potluck meal. In alternating months we gather at a local park, while in the opposite months we get out of town and go camping together. Just click on the calendar link to get all of the information.

If you are new to Dutch oven cooking or just haven't done any for a while, then this is the group for you! We have a number of members who teach DO cooking, so just let us know and we'll make sure you have a "coach" to help you get off on the right foot.

Memberships are $20 per year for a single member and $25 per year for a family.

The weather was perfect for our annual Thanksgiving DOG at Callville Bay campground at Lake Mead. In attendance were Jim & Paul, Dave & Kathleen, MargaretAnn, Nate & Laura and their kids Kirsten and Shawn. Two new attendees, Joanne and her friend Pam, plus Gary from Utah, Idaho Ron and Jamie from the Canoe Club were there as well.
We feasted on deviled eggs, Roast Turkey and all the fixings, a seven layer salad, and a variety of desserts including fruit and a chocolate cake! Idaho Ron seranaded us with his guitar while food was prepared, and later we roasted marshmallows around the campfire. Thanks to everyone for a great time.
